Billy Fox wins Illawarra Apprentice of the Year

 

There’s no stopping Billy Fox. Award after award. Regional, state, national or international, nothing seems to stop Billy’s dreams of becoming a multi award winning Chef.

“I feel so honoured to win Apprentice of the Year for the Illawarra Regional, NSW Training awards,” says Billy.

Billy will now go on to compete at state level and attend the awards dinner and presentation in Sydney.

“Melbourne is proving to be a popular place for me later in the year,” he says.

“I’ve also just won gold in the regional NSW cook-off, for the Nestle Golden Chef Hat Awards. So I’m off to the Nationals with a team mate to compete in the finals which will be held in Melbourne.

“Then I’m back again for the WorldSkills National competition in October.”

It’s been a busy year for Billy. Earlier in the year he was in Cambodia as a volunteer for projects abroad. Originally he was working as a teacher, but ended up also carrying out a community assistant role.

“It was a great experience. At the end of my apprenticeship I wanted to broaden my knowledge,” says Billy.

“For some time I’ve wanted to give back and this was perfect. Teaching kids in the community English and about health, diet and nutrition. I helped out with a sustainable food project in the school so I got to teach the kids about agriculture and the link between that and nutrition.”

It’s been an amazing year for Billy. He now dreams to move to Sydney and would love to seek work in a hatted restaurant.

“I absolutely love the fine dining experience as a chef,” he says. “Maybe even some European travel and cookery experience would be wonderful.”
